Oven Roasted Chicken with Homemade Stuffing
Chicken Stuffing Recipe
1 loaf of white bread
5 stalks of celery, diced
1 large white onion, diced
2 large eggs
½ cup of chicken stock
2 tablespoon of butter
½ teaspoon of salt
½ teaspoon of pepper
½ teaspoon of minced garlic
½ teaspoon of Italian seasoning
** Italian seasoning substitute – ½ teaspoon dried thyme and ground sage
Preheat to 350 degrees
In a large pot add butter, minced garlic, diced onion, diced celery, salt and pepper and cook until celery softens. Cut bread into pieces. Mix bread pieces into the pot until the bread is fully coated. Turn off heat and let cool for 10 minutes. Crack eggs into a small bowl and whisk chicken stock and Italian seasoning. Massage into the bread mixture. Fill baking pan and bake for 30 minutes.
***To be more exciting you can add sausage, raisins, almonds and/or mushrooms.
Clean the chicken. Cover the outside of the chicken with mayonnaise. Sprinkle chicken with salt, pepper and thyme. Stuff chicken and place in roasting pan with a cup of water in the bottom of the pan. Cover with foil and bake on 350 for 45 minutes. Take foil off and put back in for another 10-15 minutes.
At first we were unsure about the chicken being smeared with mayonnaise. However the chicken didn’t taste like mayonnaise at all. The mayonnaise made the chicken skin nice and crispy, complimenting the seasoning on top. The chicken was very moist as well. The stuffing was bursting with flavor unlike many homemade stuffing recipes. This is a perfect meal for a nice evening around the house. Makes your home smell delicious and if you have children, the kids will eat this one up. We’d definitely make this again!
