Classic Burgers & Caprese Salad (cooked on the Pit Barrel Cooker)
For the burgers:
2 lbs. ground beef
¼ c. bread crumbs
2 Tbsp. onion powder
2 Tbsp. adobo
For the salad:
5 medium tomatoes
1 medium white onion
1 Tbsp. minced garlic
1 tsp. Italian seasoning
8 oz. fresh mozzarella
4 stalks basil
½ sweet balsamic vinaigrette
Light your grill (gas or charcoal) and bring to temperature. We cooked this on our Pit Barrel Cooker.
While the grill is heating up, dice tomatoes, onion and mozzarella into a medium dice and combine in a large mixing bowl. Add balsamic vinaigrette, Italian seasoning, and garlic to the bowl.
Shred basil and chop down to about the size of a dime or smaller, then add to mixing bowl and combine until evenly mixed. Set aside in refrigerator until ready to serve.
Combine ground beef, egg, bread crumbs, onion powder, and adobo in another mixing bowl and knead until all ingredients are uniform. Mold burger mixture into patties and take out to the grill.
Cook until brown on the outside and cooked all the way through, flipping at least once to sear both sides of the burgers.
Serve on a bun with condiments and cheese if you like, along with the caprese salad.
We both loved the burgers, and the caprese salad is a staple in our home. Nothing beats a tasty burger with all the fixins cooked on the grill. Throw on a couple hot dogs too and you have a great meal that will make even the pickiest kids happy. They will also warm up to the caprese salad when you tell them there’s a ton of tasty mozzarella cheese in it. Quick and easy, this one is great for busy evenings, especially if you have kids that have activities!
