Salmon with Dill Cream

1 salmon fillet (about 2 pounds)
1 to 1 – ½ tsp. lemon-pepper seasoning
1 tsp. onion salt
1 small onion, sliced and separated into rings
6 lemon slices
¼ c. butter, cubed
1/3 c. sour cream
1/3 c. mayonnaise
1 Tbsp. finely chopped onion
1 tsp. lemon juice
1 tsp. prepared horseradish
¾ tsp. dill weed
¼ tsp. garlic salt
Pepper to taste
Preheat oven to 350°
Line a baking pan with heavy-duty foil; grease lightly. Place salmon skin side down on foil. Sprinkle with lemon-pepper and onion salt. Top with onion and lemon. Dot with butter. Fold foil around salmon; seal tightly,
Bake for 20 minutes. Open foil carefully, allowing steam to escape. Broil 4-6 in. from the heat for 8-12 minutes or until the fish flakes easily with a fork.
Combine the sauce ingredients until smooth. Serve with salmon.
Despite all the ingredients listed for the sauce, this is a very easy and quick dinner that comes out great with minimal effort. We paired our salmon with some candied sweet potatoes and steamed some shrimp as our youngest daughter doesn’t always like “flaningo” meat, which is her trying to say flamingo, by which she means salmon. Everyone enjoyed this one and adding a veggie and possibly rice, makes this a great all-around dinner.
