Baingan Bharta
Recipe adapted from New York Times Cooking

2 lbs. eggplant
2 Tbsp. lime juice
3 Tbsp. vegetable oil
1 medium onion, chopped
3 cloves garlic, finely chopped (or 3 tsp. minced garlic)
1 fresh hot green chili, thinly sliced (we used a serrano for extra heat)
1 lb. fresh tomatoes, chopped
½ tsp. turmeric
1 tsp. kosher salt
½ c. chopped cilantro, thin stems included
2 tsp. garam masala


Baingan Bharta 2

Prick the eggplant with a thin-blade knife. Grill over or next to very high heat, turning as necessary until the skin is blackened andthe eggplant collapses. You can also broil in your oven, turning eggplant until skin is nice and blackened.

When the eggplant is cool enough to handle, peel and remove stem. Mash in a bowl, with lime juice.

Heat the oil in a skillet over medium-high heat; add the onion. Cook, stirring often, until the onion is golden brown, about 10 minutes. Add the garlic and chilis and cook for another minute. Add the tomato, turmeric and salt. Cook until the tomato is soft, about 5 minutes.

Stir in the eggplant purée and cook, stirring, 5 minutes. Stir in the cilantro and garam masala and turn off the heat. Serve hot with warm chapati bread or naan, or over rice.

Our Thoughts:

This was fantastic!  Unfortunately, Jeremy was the only one who ate this, as Jen is not abig fan of Indian cooking.  But he loved it.  The flavors were perfect and the heat was hot enough to break a sweat.  This can be toned down by using a different type of chili pepper, but the serrano worked very well.  The smells of it cooking throughout the house were amazing, and it was extremely hard not to eat it as it was cooking.  We served it over rice, but will also be taking it for lunch with some garlic naan, and Jeremy is more than excited about lunchtime tomorrow.  This one is highly recommended, Baingan Bharta 4especially if you love Indian cuisine, and a great entry point if you have never tried any, or if you haven’t tried to make your own.  Starting to cook a new style of cuisine in your own home and kitchen can be daunting, but following this one exactly will produce some of the most flavorful and aromatic food you have every made at home!
