2 lbs. ground beef
1 package flour tortillas
1 lb. shredded cheese (your favorite)
1 jar fresh pico de gallo
½ head lettuce (shredded)
1 can green chilies
cooking oil (we used corn)
1 c. ranch dressing (your favorite)
1 c. salsa (any choice)
Start by making the Mexican ranch dressing by combining the ranch dressing and the salsa. Try to get as little salsa juice as possible and instead just the chunky contents. Mix until fully combined.
Mold beef into burger patties and cook in large skillet over medium heat until browned and cooked internally to your desired doneness.
In another skillet, heat a very small amount of oil over medium heat. Begin assembling burger by laying a single tortilla in the bottom, then adding the burger, top with cheese, lettuce, chilies, and pico. Then top with dressing and a second tortilla.
Cook until bottom tortilla is golden and has some dark spots, then flip entire burger and cook the other side the same amount. Repeat this for each burger.
Cut in half and serve immediately with French fries, tortilla chips and salsa or queso, or some seasoned rice.
We are actually surprised that it took this long for this recipe to come up as a feature for Flix & Fare, as it is one of Jen’s favorite sandwich meals, and something she loves to make and has been serving for a very long time. It is especially great for those of you who may not be too adventurous in the kitchen. It takes the savory timeless flavor of a burger and adds a wonderful Mexican element that just can’t be beat. Almost a quesadilla and almost a burger but not really either. Another great feature is that the kids generally love this one because its very close to a taco. Give this one a try one night, it’s fairly easy and guaranteed to satisfy.
