PBC Cedar Plank Tilapia
5-6 tilapia loins
2 lemons, juiced
1 tsp. garlic powder
1 tsp. cracked black pepper
½ tsp. kosher salt
Soak cedar plank in cold water 1-2 hours before beginning.
On a separate plate, drizzle tilapia loins with the lemon juice and dust with garlic powder, pepper, and salt.
Light your grill, smoker, or other cooker according to directions and bring the grill to operating temperature.
Place tilapia loins on cedar plank trying to keep all the fish on top of the cedar and not sticking over the edges.
Place plank with fish into your grill or other cooker, and cook for 20-25 minutes or until fish is cooked through and flakes with fork.
(If using a smoker or Pit Barrel Cooker, cover, install rods and cook for 45 minutes)
Remove and serve!
We decided to try our first fish plank and it was great! Jeremy enjoyed it much more than Jen and the kids, as they do not like the smoky flavor as much as he does. We served it with quick green beans and mango shrimp, for a little bit extra, instead of a rice or a pasta. The tilapia was very flaky and fresh and had a nice tangy bite from the lemon, which was offset by the lightly permeating smoky flavor. This is great one if you are having guests or at a small barbeque, especially if you have friends or family that will not eat pork, poultry, or beef!
