Teriyaki Boneless Pork Ribs

2 lbs. boneless pork loin rib
½ c. soy sauce
¼ c. brown sugar
1½ tsp. fresh ginger, minced
1 tsp. garlic, minced
1 Tbsp. honey
1 tsp. sesame oil
3 Tbsp. mirin
¼ c. water mixed with 3 tsp. cornstarch

Combine all ingredients except pork in small saucepan, bring to a boil, and simmer for 4 minutes.  Remove from heat and allow to cool.

Set oven to broil.

Coat all ribs in teriyaki sauce and place on wire rack on cookie sheet.  Cook for 15 minutes, and remove.

Paint each rib with additional teriyaki sauce and return to oven for an additional 15 minutes.

Remove from oven and serve.


Our Thoughts:

This is actually a recipe we have made many times in the past.  However, we usually make it with a barbeque sauce, but tonight Jen decided to make it with a homemade teriyaki sauce.  It was fantastic and everyone enjoyed it, including the kids.  Broiling the pork makes the exterior nice and savory and crisps the little bit of fat that comes on the ribs.  Jeremy and Jen found that it was just slightly too salty, so you may want to go a little lighter on the soy sauce.  This is a fantastic and quick recipe with no stovetop work required as it can all be done in the oven.  We served ours with peas and rice!  Give it a try next time you decide to pick up some pork at the grocery store.
